I'd love to try and making a veg empanada from scratch, if you can recommend a recipe for the dough I'd be most grateful.
In return, here are 2 autumn pies I shared last year, they are the most heartwarming and comforting kind of savory pie, nicely wrapped up in dough, just like empanada.

One question about the leek hand pies (which look amazing, btw): any suggestions for a replacement for the cheese? I know I could just use vegan cheese but I’m not a huge fan so I thought I’d pick your brain for any creative ideas you may have 😆
Kind of 🤣 I have a milk protein intolerance, so I can’t eat milk/cheese/yogurt/cream, but butter is okay because it’s mostly fat and has negligible protein (for me personally). So lactose-free milk won’t work for me 😭 I usually just leave out cheese if there’s not a clear substitute (I was never a huge cheese fan anyway 🫣) but here I feel like it may leave the pies a little dry?
Somehow it took me a while to come up with a very simple solution: just sub the cheese for mashed/soft potatoes which go perfectly with leek. Add butter too I say, and a few walnut bits for texture! Perhaps herbs would be a good idea too :)

I love the linguistics lesson! I never knew that Spanish empanada's existed honestly. You rarely see it on Spanish menus outside of Spain! I'm most familiar with the typical Argentinian beef empanada!
Yeah, it’s definitely not something you would find on a restaurant menu outside of Spain! Actually even in Madrid you have to either go to a Galician restaurant or a specialized shop to buy them. They’re more common at actual restaurants in Galicia and the north of Spain.
Argentinian beef empanadas are also great! There’s a chain here that sells them. There’s something similar in Spanish culture, too, but they call them empanadillas.

Thanks! I think the easiest thing may be to use puff pasty or pie crust, even though the outcome would be a little different.
