Two very important zucchini related questions:

Rachel, that stir fry looks amazing!! It has immediately earned a spot on our meal plan for next week. I can’t eat cheese so no halloumi fritters for me, but I think I could easily just leave out the cheese in my half (but keep the hot honey drizzle because that sounds delish). Thank you so much for sharing!

I can't wait to hear how you get on! And (almost) me too - halloumi (if I buy the fancy one) is one of the few cheeses I can eat - I can't eat any cheese made with cows milk. Don't you find so many dishes and recipes are unnecessarily packed with cheese?! But yes, the hot honey drizzle will go beautifully on zucchini anything!

I agree re: the cheese! I find it less with restaurants in Spain compared to the US, but sometimes places here that try to be more modern will have it in places that, in my opinion, it really shouldn’t be.
