Pimientos de Padron and roast veggie bowls are two of my favourite things to eat. I have to admit that I'm swimming in jealousy at all the delicious food you get to eat in Madrid; British food - no offence to any of my fellow brits - just doesn't compare to European food!

Apologies if this has been mentioned previously (I'm a new reader to your work) - have you found yourself cooking more since moving to Madrid because you have access to fresher fruits and vegetables? What is something you miss most about American food / food lifestyle there, I can imagine it's quite different!

Great question! I definitely cook more since moving to Madrid. The change is a combination of a lot of factors, actually: cheap and convenient access to fruits and vegetables, living with another person which in some ways is easier than cooking for one, and having a better work-life balance. David (my partner) also likes to cook and experiment with different recipes/techniques, so that provides an extra incentive since I’m not the only one in the kitchen!

I think I miss specific places and restaurants more than I miss American cuisine in general. I lived in Chicago for several years before moving here, and there are a lot of local restaurants and coffee shops that still hold a special place in my heart. I also miss Arby’s curly fries haha! I can think of a couple of places that serve curly fries in Madrid but they’re just not the same (probably because they’re usually made from scratch instead of frozen!).

Just... delicious!! And I'm really fascinated about those pancakes!! You know, I 've never cooked them, have to try them! And about that picture of "jamón", grilled cheese and "lomo"... I'm hungry now!

I like to experiment, so the way you try this with that, that mixture of cultures and gastronomy, sounds really fascinating! (Going to the fridge right now!! :-D)

Thanks so much, Ángeles! Here is the recipe we usually use to make the pancakes if you want to give them a try: https://www.seriouseats.com/light-and-fluffy-pancakes-recipe. It’s cool because you can make the dry mix ahead of time and then just make batches whenever you want. You certainly don’t have to make them in a paella pan 😂 We actually had the idea one day when we had friends over for brunch-- it’s super efficient since you can make more at once and not worry about having to keep the whole batch warm. We also make French toast this way!

Haha they’re admittedly not my favorite flavor! I’d rather have real jamón. I usually go for either regular potato chips (there are actually lots of local shops that make their own here on-site, but in a pinch Lay’s will do) or something called Gublins, which have a crunch and taste similar to Fritos corn chips but the shape of mini pasta shells.
