Mine with onions, please 😆 In Friuli (the region that sits on top my region, on the north east of Italy) they make "frico" - a cheese and potato pie that's filling, nutritious and heartwarming. I wouldn't mind a crossover between a frico and a paella (not for the purists clearly).

I'm a concebollistas person. I have tried to make it once and it was an absolute mess. I love potatoes, I love egg, so why wouldn't I try this recipe. However, the part where you have to flip it is so hard and requires more wrist strength and coordination than I realised! I had mine a little runny so it was slipping and sliding and dribbling all over the place. Not sure how you could eat it as a tapa though, egg, potatoes and bread makes for a fairly filling dish, even if it is small!
Whenever I have some leftover potatoes, I cut them up and make a tortilla. A very casual, amateur one, I'm sure, but so good. And I'd have to say, onions, please!
I'm in a vineyard in Rioja right now eating the best tortilla I've ever had and drinking red wine at 10am.

I’ve had the tortilla before when you guys were in and I loved it! Never had it like that before, I’ve always thought of it as a Mexican dish!
